Too tired to cook after work? With these 18 delicious veggie and vegan meal prep recipes, you’ll never be stuck for a healthy midweek meal again.

When we finally collapse on the sofa at the day, cooking is the last thing we want to do. Exhausted from endless meetings, slightly tipsy after post-work drinks and sweaty after a cramped commute, it’s enough to make the Deliveroo app and a takeaway pizza on the sofa look real tempting. But it’s January and it’s 2020, and we’ve promised to ourselves that this year will be different - a year without regular takeaway apps, a year with healthier eating habits and a year of meal prep and make ahead. 

While a hungover Sunday spent chopping and frying may sound like a particularly cruel form of torture, in reality it saves a whole lot of stress and work later on in the week. Consider; a little efficiency on the weekend and an afternoon spent in the kitchen, singing along to your favourite playlist, and you’ll have a week’s worth of healthy, homemade stews, sauces, bakes and roasts ready and waiting. Plus, think about the money you’ll save - bye-bye Deliveroo!

With this in mind, we’ve pulled together a selection of the healthiest and tastiest dishes that you can cook en masse, including breakfasts, lunches and weekly dinners.

Vegan overnight oats

Overnight oats are healthy, easy to make and they last all week, plus you can add any kind of topping you fancy. Food blogger Yumna Jawad of Feel Good Foodie suggests peanut and strawberry ‘jelly’, apple, cinnamon and nuts and banana and nutella. All you need for this basic recipe (not including toppings) is oats, plant-based milk, chia seeds, vegan yoghurt and vanilla extract. Make sure you have plenty of containers such as empty jam jars and mason jars to store your oats.

Smoothie meal packs

Simply prep your fruit and greens and freeze them on the weekend, then simply blend up with water, milk or a milk substitute and your favourite dry ingredients (chia, hemp or flax seeds, coconut, unsweetened cocoa or protein powder) on weekday mornings.
